The second year hospitality students at Dimboola Memorial Secondary College will be holding their first a la carte restaurant night on Wednesday, 29 April.

The evenings menu selections will be as follows:

Entree
Parsnip veloute with crisps, spiced oil and cress
Chicken liver pate with house made lavosh and chutney
Peperonata and goats cheese tart

Mains
Confit of duck with creamed leeks, potato rosti, crispy pancetta and beetroot jus
Eye fillet steak with potato and mushroom croquettes and Jerusalem artichoke puree
Twice cooked pork belly served on smashed potatoes finished with an apple and Marsala jus
Winter vegetable wellington with potato puree and red onion jam

Dessert
Chocolate, date and pecan torte with Chantilly cream
Orange and almond cake with poached quinces
Poached apples, burnt butter caramel and popcorn ice-cream
